If you want to serve something pretty and light for your Fourth of July celebration, this is for you. Patriotic Fruit Delight is so easy to make and can be made the day before. Serve as a salad or dessert.
The only time consuming part of this recipe is giving the gelatin layers time to get firm before you can “construct” your dessert. You can be adventurous with your fruit choices and flavors of Jell-O, but red, white and blue seemed best for the Fourth.
The gelatin mold slices easily and is a cool, refreshing and patriotic dessert.
Patriotic Fruit Delight
1 pkg. (3 oz.) strawberry Jell-O
1/2 cup strawberries (frozen or fresh)
1 1/2 cups boiling water (will be divided)
1 pkg. (3 oz.) Island Pineapple Jell-O
1/2 cup crushed pineapple
1 pkg. (3 oz.) Berry Jell-O
1/2 cup fresh bluberries
2 cans (12 oz. each) evaporated milk, chilled (will be divided)
Coat a 9” x 5” baking dish or loaf pan with any nonstick cooking spray.
First layer: In a small bowl, dissolve strawberry Jell-O in 1/2 cup of boiling water. Let stand for about 10 minutes. Place strawberries, strawberry Jell-O and 1 cup of the chilled evaporated milk in blender. Puree for about 15 seconds. Pour into prepared loaf pan. Refrigerate for about 30 minutes or until firm.
Second layer: In a small bowl, dissolve the pineapple Jell-O in 1/2 cup of boiling water. Set aside for about 10 minutes. In the blender, place crushed pineapple, pineapple Jell-O and 1 cup of chilled evaporated milk and puree for about 15 seconds. Pour onto strawberry layer. Refrigerate for about 30 minutes.
Third layer: Repeat process with the blueberries, blue Jell-O and evaporated milk.
When unmolding, run the point of a knife around the top of the loaf pan or baking dish. Place serving platter on top of Jell-O mold and invert mold and platter together. Cut into slices and serve.
