Grilling non-traditional foods has become a real treat in the past few years. Grilled BBQ Chicken Pizza is a different and delicious alternative to the traditional tomato sauce based pizza. Use your favorite BBQ sauce, vary the toppings, and your pizza will have a wonderful smoky flavor when baked on the grill.
This recipe is a basic one. Alternatives can be a pizza with chopped green peppers, sliced Roma tomatoes, chopped garlic, canned sliced mushrooms and pulled pork instead of chicken.
With a package of pizza dough mix and a pre-cooked rotisserie chicken, the Grilled BBQ Chicken Pizza is a quick way to please your family with a grilled pizza.
Grilled BBQ Chicken Pizza
1 rotisserie chicken, meat shredded into bite-sized pieces (about 2 cups)
1/2 cup BBQ sauce
1/4 cup finely chopped fresh cilantro
1/2 red onion, sliced thinly
1 pkg. (7.25 oz) pizza dough mix
1 cup shredded Mexican blend cheese
Prepare pizza dough according to package directions. Preheat grill to medium-high.
Roll out dough on floured surface into an oval or circle, making it about 1/4 inch thick. Brush both sides with olive oil and place directly onto grill. Close grill top and grill about 3 or 4 minutes, then flip and grill other side. Remove from grill.
Combine chicken, sauce and 2 tablespoons of the cilantro. Spread evenly onto grilled pizza dough. Add onion.
Return pizza to grill and cook over low heat about 6 or 7 minutes. Sprinkle cheese over top and add remaining ciliantro. Bake an additional 5 minutes or until cheese is melted.
