The recipe this week is not the most elegant dish I’ve done in In the Kitchen, but it is always a crowd pleaser at the McDaniel home. There are many ways to prepare macaroni and cheese, but when it comes a creamy, cheesy bowl of macaroni, this one always comes out on top with our family.
My sister-in-law, Wanda McDaniel, brings this dish to our family gatherings because it is always a “must-have.” The dish is always the first one passed around and the first bowl emptied! During this busy season, sometimes staying with the simple is a good idea!
Wanda and her husband, Johnny, had the family over for Thanksgiving this year, where approximately 25 guests enjoyed all the wonderful things that come from Wanda’s kitchen. She prepared everything, with the exception of a few desserts, and the Thanksgiving dinner got rave reviews.
So here is Wanda’s simple Macaroni and Cheese. Serve it as is, or dress it up. However you do it, I think your family will enjoy it.
Wanda McDaniel’s Macaroni & Cheese
1 box (1 lb.) elbow macaroni
1/2 of a 3 lb. box of Velveeta cheese
2 to 3 cups milk
2 to 3 tablespoons butter or margarine
Boil water in a 2-to-3 quart pot, making sure there is plenty of water to cover the macaroni, plus a little extra. Boil macaroni until tender, drain and rinse. Set aside.
In a sauce pan, add 2 to 3 tablespoons of butter, 2 to 3 cups of milk and 1/2 of a 3-pound box of Velveeta cheese that has been cubed. Heat over low heat until melted. Add macaroni and a dash of salt. Blend and serve.
