Pineapple Cherry Delights

This is just a good, anytime cookie recipe, but the chopped maraschino cherries do add some festive color. And sometimes it’s nice to have something with a taste of fruit in it at holiday time. This recipe makes quite a few, so you will have plenty to share.

1 cup butter or margarine (2 sticks), softened to room temperature

1 cup sugar

1 cup brown sugar, packed

2 eggs

4 cups flour-plain all-purpose

2 tsp. baking powder

1/2 tsp. baking soda

1/2 tsp. salt

1 can (8 oz.) crushed pineapple, drain

1/2 cup chopped maraschino cherries

Cream butter and sugars until light and fluffy. Add eggs. Combine flour, baking soda, baking powder and salt. Gradually add to the creamed mixture and mix well. Stir in pineapple and cherries.

Drop by rounded tablespoons onto ungreased cookie sheets or onto cookie sheets lined with parchment paper. Bake at 400 degrees for about 10 minutes or until lightly browned.
