Emma Greene and Brooke Longhurst had a great time decorating these cookies. Emma is the daughter of Brian and Maria Greene and Brooke’s parents are Glen and Emily Longhurst, all of Maryville. One cooking note: Parchment paper is the best to use when baking this kind of cookie.
1/2 cup shortening
1/2 cup brown sugar, packed
1/2 cup white sugar
3 to 3 and 1/2 cups flour (plain all-purpose)
1 tsp. salt
1 tsp. soda
1 tsp. ground cinnamon
1/2 tsp. ginger
1/4 tsp. cloves
3/4 cup molasses
1/4 cup water
Cream shortening and sugars together. Sift flour, salt, soda and spices. Blend into creamed mixture, alternating with the molasses and water. Dough should be very stiff.
Chill dough for at least 1 hour, or overnight.
Roll out to about 1/4 inch thickness on a floured cloth or surface. Cut out with favorite gingerbread man and woman cookie cutter and place onto baking sheets that have been lightly greased or lined with parchment paper.
Bake at 350 degrees for about 10 to 12 minutes. Let cool and decorate.
