Christmas Meringue Puffs
These are so light and delicate and absolutely the easiest cookies to make. Decorate any way you like. You can leave them white and sprinkle with colored sugar, or add a drop of red or green food coloring to the meringue before baking for a festive appearance.
3 egg whites
3/4 cup sugar
1/2 cup mini-chocolate morsels or white chocolate morsels
Preheat oven to 375 degrees. Beat egg whites until stiff peaks form. Slowly add sugar. If adding food coloring, add small amount at this time.
Fold in chocolate chips. Drop by teaspoons on cookie sheet lined with parchment paper. Sprinkle colored sugar on top at this time. Turn off oven and let puffs sit for at least 4 hours.
