Beef Taco & Cornbread Bake is a basic recipe that can be tailored to suit your families’ tastes. In my family, we add 1/2 cup crushed Frito Chili/Cheese flavored corn chips before the corn muffin mix goes on. As a topping, sprinkle a little shredded cheese (Mexican blend or pizza blend, sharp or mild cheddar cheese) to give it a cheesy taste or top with a dollop of sour cream if you need to tone down the spices.
Beef, Taco & Cornbread Bake
1 lb. ground beef
1 small onion, chopped
3/4 cup Picante sauce
1 envelope taco seasoning, mild or hot
1 can (16 oz.) whole kernel corn, drained
1 can (8 oz.) tomato sauce
1/2 cup shredded cheddar cheese
1/2 cup crushed Frito chili/cheese flavored corn chips (optional)
1 (8 oz.) pkg. corn muffin mix
Cook the ground beef and onion until brown. Drain. In the skillet, add picante sauce, tomato sauce, corn and taco
seasoning mix. Heat through. Stir in cheese and pour into a 2 quart shallow baking dish. Sprinkle corn chips on top. Mix corn muffin mix according to package directions and spread over beef mixture.
Bake 25 to 30 minutes or until crust is golden brown.
