Picnics and church socials have their own special menus. Quick Coconut Pie is a mainstay whether spreading the blanket under the old oak tree or on the church grounds, just left of the cemetery. Actually, this recipe makes two pies, so spend Saturday at the Cove with the family before carrying-off the second pie to the church social.
Quick Coconut Pie
4 eggs
2 cups milk
1.5 cups sugar
1/2 cup all-purpose flour
1/4 cup butter or margarine, melted
1 tsp. vanilla extract
1 (7 ounce) can flaked coconut
Combine first 6 ingredients in the container of an electric blender; blend on low speed 3 minutes. Pour mixture into 2 lightly greased 8-inch pieplates, and let stand 5 minutes. Sprinkle coconut over egg mixture; press coconut into mixture. Bake at 350 degrees for 35 to 40 minutes or until set. Chill before serving. Yield: two 8-inch pies.
