If you are craving a little zesty flavor at mealtime, try this simple recipe. You can add a lot of different ingredients to this dish and customize it to your family’s favorites. Quesadillas are usually stuffed with cheese as a base, and you can then add a variety of ingredients. Try refried beans, ham, chicken, sausage, mushrooms, black olives, chopped green onions, chopped cilantro, diced green peppers or black beans.
What’s inside the quesadilla is further enhanced by the toppings, which, again, can be customized to what your family likes best. Favorites include sour cream, salsa, shredded lettuce and diced tomatoes, guacamole and additional shredded cheese.
This quick and easy recipe serves four.
8 (8 inch) flour tortillas, plain or whole wheat
1/2 stick butter, melted
1 pkg. (8 oz.) or 2 cups shredded Mexican blend cheese
2 to 3 cups shredded or chopped cooked chicken
1 can (15 oz.) black beans, drained and rinsed
1 cup salsa
Brush one side of tortillas with the melted butter, and place on a cutting board, buttered side down. Add 1/4 of the cheese, followed by the chicken. Layer with beans, then salsa. Sprinkle a little extra cheese on top to help hold tortilla together.
Repeat for each of four tortillas.
Place second tortilla on top of each layered one. Brush tops with melted butter.
Lightly spray skillet with non-stick cooking spray. Heat on medium-high heat for 2 to 3 minutes. Tortilla will brown quickly.
Using a large spatula, turn tortilla once. Let brown on bottom, then remove from pan.
Let quesadilla cool for one minute, then slice, pizza style, into triangles.
Repeat for other three tortillas. Serve warm with sour cream, shredded lettuce and tomato on the side.
