My weakness -- besides the whole chocolate thing -- is Chicken Broccoli Alfredo. It’s a dish I look for when we eat at restaurants, and one I love to make at home because it is easy and quick. I use the broccoli florets already copped and a jar of prepared Alfredo sauce. With these modern conveniences, this meal is ready in a flash for tired shoppers or hungry football players.
It’s a good comfort food -- not only because it is hearty and nourishing, but because it is so quick to make.
Chicken Broccoli Alfredo
4 chicken breasts, cooked and diced
1 pkg. (12 oz.) broccoli florets
1 jar (1 lb.) Alfredo sauce
1 box Fettucine noodles
1 small tomato, diced
dash of salt
Boil noodles until softened. Drain. Bring Alfredo sauce to a boil and add noodles. Steam broccoli and add to noodles and sauce. Stir gently then add your chicken and salt. Garnish with tomatoes, and serve with garlic bread.
If you are cooking for just two, this recipe can be easily halved.
