Melissa’s Sweet Potatoes

If the sweet potato casseroles aren’t to your liking, try this sweet potato dish from Melissa Meade.
Melissa’s Sweet Potatoes
4 large sweet potatoes (peeled and cut into small chunks)
2 cups sugar
½ stick butter
2 tsp. vanilla
2 tablespoons cinnamon
Place potatoes in bowl and pour sugar over top. Cover bowl with a paper towel and let it sit overnight.
When ready to cook, place potatoes in saucepan and add 2 cups water and bring to a boil.
Reduce heat and add cinnamon, butter and vanilla. Let simmer for about 45 minutes or until potatoes have “cooked down,” and sauce has thickened.
Add more water if sauce gets to thick.
