Broccoli, Rice & Cheese Casserole

2 boxes (10 oz.) frozen chopped broccoli, thawed

1 cup sour cream

2 cups white rice (cooked)

2 cups shredded sharp cheddar cheese (reserve about ½ cup for topping)

1 small onion chopped

1 stick butter

1 tsp. salt

Approximately 1 cup Ritz crackers, crushed

Saute onion in the butter for about 10 minutes or until transparent. Combine all ingredients except crackers, and spoon into lightly-greased 9 x 13 baking dish. Sprinkle crackers and reserved cheese on the top. Bake 30 minutes at 350 degrees .

To give it more cheese flavor, if desired, use crushed Cheez-Nip crackers instead of Ritz.
