It was definitely a treat as I joined with Mary Constantine, food writer for the News Sentinel, in judging the coffee cake, pound cake and stack cake divisions. One of the blue ribbon winners was Kathleen Janke with her Blueberry Almond Sour Cream Coffee Cake.

These cinnamon rolls were made by Emily Byrd, who has been baking them now for about 18 years.
Emily oversees The Cafe Espresso Coffee Bar, which serves homemade sweet rolls and other homemade breakfast items on Wednesday mornings from 7:30 to 9 a.m. and on Sundays from 8 to 10 a.m. The Bar was established several years ago by Chuck O’Conner, pastor of Family Life and Missions, to raise money for ministries and mission opportunities sponsored by the Family Life Ministry of the church. The Coffee Bar has provided support for such projects as the Grief Ministry, Family Promise, Reaching Our Community and the Go Ministry.

Knowing that Brenda, like myself, loves any recipe with crab meat in it, I found a recipe for Crispy Crab Cakes on the Food Network site and gave it a try. They were delicious, easy to make and sure to please.

This grilled tuna is both quick and healthy and can be served on a bed of healthy brown rice and some steamed broccoli with almond slivers. What a great, healthy meal without heating up the kitchen!

When my neighbor, Art Will, brought over some tomatoes he had grown, and I had just the recipe in mind for them. Of course, I had to have my first tomato, cheese and mayonnaise sandwich of the year with one of the tomatoes he brought. 
The others ended up in this week’s recipe. Recipes for Stuffed Tomatoes will vary from quite plain stuffings to elaborate ones. I choose this one because I have used it in the past with good results, and the ingredient list is “middle of the road.”
So when you find yourself overrun with tomatoes, try this for your family.

Patriotic Fruit Delight is so easy to make and can be made the day before. Serve as a salad or dessert.
The only time consuming part of this recipe is giving the gelatin layers time to get firm before you can “construct” your dessert. You can be adventurous with your fruit choices and flavors of Jell-O, but red, white and blue seemed best for the Fourth.
